History

  • Tradition

Profession : winegrower !
The winegrower is the keeper of a rural tradition, the man of his region who, year after year, repeats the immutable gestures of his craft. In my family, we have been winegrowers for many generations; my ancestor Pierre Louis Fleury was already making wine in Trélou in 1842 ! Today, I am proud to continue this family tradition with my children Christine and Bertrand. Jean-François Fleury

  • Soil

An exceptional garden… the best-cared for in the world.

From the pruning of the vines through to the harvest, we devote our time, expertise and energy to the attentive care of our vineyard, to produce grapes of the highest quality, while protecting the environment through the practice of reasoned farming. On the 8 hectares of our vineyard, located on the slopes of the Marne valley, we grow all three Champagne grape varieties :
- Pinot Meunier (red grape with white flesh) gives the wine roundness and fruitiness
- Pinot Noir (red grape with white flesh) gives the wine body and vinosity
- Chardonnay (white grape) brings finesse and lightness

  • Savoir-faire

Meticulous picking and careful pressing.

Following the Champagne tradition, the grapes are picked exclusively by hand, to keep the bunches intact. These are then quickly, but carefully, transported to the press. The grapes, handled with care, are pressed gently (to avoid coloration of the juice) in our traditional press, quality-approved, which can hold 4000 kilograms.

  • Creation

Champagne is a work of creation.

Among the stages needed to produce champagne, one is of crucial importance : the blending. This is a special moment for us; the Fleury family comes together at the end of winter to taste the wines of this year and the reserve wines of previous years, in order to create the future wines. This is the prelude to the other important steps in the Champagne wine-making process, all carried out on our estate, in the cellars : bottling, secondary fermentation (prise de mousse), ageing on the lees, riddling, disgorgement, dosage and labelling.
